Why Cooking Oils Have No Vitamin C
Vitamin C is a water-soluble vitamin, meaning it dissolves in water and is stored in the watery compartments of plant cells. Oils are extracted from the fatty portions of plants — seeds, nuts, fruits like olives and avocado — and are composed almost entirely of triglycerides. During pressing and refining, the water-soluble fraction, including vitamin C, is removed or destroyed. That is why nutrition databases list 0.0 mg of vitamin C per 100 g for every common cooking oil.
This is not a quality issue. Oil is simply not a vitamin C food. Its nutritional value comes from energy (about 884 kcal per 100 g for most oils) and fat, including essential fatty acids. Trying to get vitamin C from oil would be like trying to get dietary fiber from butter — the chemistry does not allow it.
How the Calculator Works
The calculator uses three pieces of information:
- Oil type — each oil has a known nutrition profile. The vitamin C value is 0.0 mg/100 g for all oils, but calories and fat differ slightly (coconut oil is about 862 kcal/100 g, most others about 884 kcal/100 g).
- Serving amount — you can enter the amount as grams, tablespoons, teaspoons, cups, milliliters, fluid ounces, or ounces by weight.
- Conversion to grams — the calculator converts your chosen unit to grams using standard density and spoon-volume equivalents. A tablespoon of oil weighs about 13.6 g, a teaspoon about 4.5 g, and a US cup about 216 g.
The formula for vitamin C is simple:
Vitamin C (mg) = grams of oil × vitamin C per 100 g ÷ 100
Because the vitamin C value is 0, the result is always 0. We then show the percent of the Daily Value (DV) using the FDA reference of 90 mg per day for adults, and calculate calories and total fat from the same 100 g basis.
Worked Examples
Example 1: You drizzle 2 tablespoons of olive oil over a salad.
2 tbsp × 13.6 g/tbsp = 27.2 g of oil.
Vitamin C = 27.2 × 0 ÷ 100 = 0.00 mg.
Calories = 27.2 × 884 ÷ 100 ≈ 240 kcal.
Fat = 27.2 × 100 ÷ 100 = 27.2 g.
The salad dressing adds significant energy and fat but contributes nothing to your vitamin C intake.
Example 2: A recipe calls for ⅓ cup of coconut oil.
⅓ cup ≈ 72 g. Vitamin C = 72 × 0 ÷ 100 = 0 mg. The coconut oil contributes about 621 kcal and 72 g of fat, and 0% of your daily vitamin C.

Frequently Asked Questions
Is there really no vitamin C in any oil?
Correct. Commercial cooking oils from plant sources contain 0 mg of vitamin C per 100 g. Cold-pressed or extra-virgin oils may retain more antioxidants, such as vitamin E and polyphenols, but vitamin C is still absent because it is water-soluble. Can I count oil toward my daily vitamin C goal?
No. Even if you consumed a whole cup of oil, you would still get 0 mg of vitamin C — and more than 1,900 kcal. That is why vitamin C recommendations are always met through fruits, vegetables, and fortified foods.
Does vitamin C survive if I cook vegetables in oil?
